Easy Alfredo-style Sauce

White Bean Alfredo-style Sauce


1/4 cup Earth Balance butter
2 cloves garlic, minced
1 1/2 cans rinsed and drained white beans, or two cups
1 1/4 cup unsweetened flax milk or other plant-based milk, adding more to thin to your preference
Pinch of salt and pepper to taste
Parsley (optional)

Warm your frying pan and melt the vegan butter on low-medium heat.  Add minced garlic and cook until you strongly smell the garlic, or about three minutes.  Next, add the white beans, flax milk, melted garlic and vegan butter to a blender or food processor.  Blend until smooth.   Add the white bean mixture back to your pan and warm until heated through.  When warm, add to your favorite pasta dish and serve immediately.
